Pass the Dutchie: Caribbean Beef Hot Pot Recipe
Recipe for Pass the Dutchie : Caribbean Beef Hot Pot served with sweet fried plantain and avocado.
This is a staple hearty meal from Jamaica. Great for cozy nights in or entertaining friends and family. This slow cooked beef will make even the stiffest dancer scream out 'Run de Riddems'. The word Dutchie is derived from the large dutch pot which meals like these where traditionally made. If you don't have a dutch pot you can still make this dish with any deep pan.
I learn't this recipe from an old colleague, she used to always fill the staff room with smells of spices and that sweet smell of jerk. One day I had to ask her how she made this aromatic taste of the Caribbean. Which filled up our dreary London staff room. She joked that if she told me she would have to kill me after and I still hope that the recipe doesn't explode after you read it.
Serves 3-4 people

Cook Time: 2 hours

Ingredients : 1 kg Beef
1 Teaspoon white vinegar (to wash beef)
2 tablespoons of garlic paste
1/3 table spoon everyday seasoning
1/2 small onion finely chopped
2 spring onion diced
1 cup of water
3 teaspoons of fish and meat sauce
2 teaspoons of jerk seasoning
1 teaspoon of black pepper
2 teaspoons of beef steak seasoning
1 teaspoon Sriracha sauce
1/3 teaspoon of paprika
1/2 maggie cube
3 carrots
5 potatoes
1 avocado
1 bay leaf
1/4 packet of Cock Soup Mix
2 ripe plantains
Beef Preparation : Wash beef with water. Using your hand rub beef removing any grit that may be on the beef. Once beef is clean and excess blood has been drained from the beef pour 1 teaspoon of white vinegar on the beef then rinse the vinegar off with a little more water.
Marinade Preparation: Mix the plum tomato with Jerk seasoning, fish and meat seasoning,
Paprika, Jerk seasoning , Garlic paste, Beef steak seasoning, Black Pepper, Sriracha sauce in a blender, blend until smooth.
Pour blended marinade onto beef, place a bay leaf on top and leave in the fridge for minimum 4 hours. For maximum flavor marinade over night.
Heat a pan with 1 table spoon of oil on a medium heat, place the meat (remove extra marinade) in the pan an sear all sides until brown.
Pour the rest of the marinade on top of the beef. cover pan and cook for 1 hour on a medium/low heat. Turn Beef every 20 mins.
Carrots, Potato, Onion, Spring Onion, Plantain, Scotch Bonnet pepper.
In a separate pan, put cock soup mix with 1 cup of boiling water with chopped potatoes and carrots. boil for 6-8 mins. Then add to simmering beef.
Leave to cook for 30.
Frying Plantain: Peal off skin from plantain as you would a banana then slice into small pieces. Deep fry in oil. Served with fried plantain and sliced avocado
Serve with fried plantain and sliced avocado and enjoy.
